On the griddle
Everything that comes off this truck goes over the coals first. The salsa follows — never the other way round.
Warm tortillas, grilled fillings, a squeeze of lime and salsa that arrives last. Small enough to order three.
Steak laid right over the coals until the edges char and the smoke gets into it. This is the reason the truck smells the way it does.
Weekends only, wrapped hot in foil, eaten standing up in the parking lot before the day starts properly.
The truck
Saguaro Street Kitchen is a mesquite-fired truck out of Tucson. Carne asada hits the grate, tortillas warm on the flat top, and the smell does most of the advertising.
We park up for lunch service, evening pop-ups and weekend mornings — and we roll the whole thing to your office when the crew needs feeding.
