A long supper-club table seen edge-on, plates and glasses receding into a dark, candlelit room

Taos, New Mexico · ticketed seasonal dinners

Pull up a chair for the whole season.

Root & Ember sets one long table and keeps it set — ticketed seasonal dinners, chef collaboration nights and farm dinners, each one poured alongside its own wine and spirits pairing. You take the seat; we take care of the rest.

The season calendar

Every dinner is its own place card.

Each dinner is ticketed on its own and paired on its own. Take one seat in the season, or hold the same chair all the way through — either way the ticket is the place card you keep.

The evening

The parts of the night that never reach the menu.

Linen laid the same afternoon, candles lit before the first course, plates landing in the middle of the table for whoever reaches first. None of it is written down, and all of it sets the tone.

  1. The linen

Laid the same day, unstarched, still holding the fold from the shelf.

  2. The candles

Lit before the first course and left to burn down. The table gets warmer as the night goes.

  3. The pass

Where plates leave the kitchen and land in the middle of the table, for whoever reaches first.

Wine & spirits

Every dinner is paired, course by course.

The pairing comes with the ticket, not on top of it. Glassware is set before you sit, a pour arrives with each course, and the night finishes at the head of the table with a spirits flight once the plates are cleared.

  1. Set before you sit

Your glasses are already at your place when you find it, so the first pour doesn't wait on anyone.

  2. A pour for each course

Chosen against the dish in front of you and poured at the table, never from a distance.

  3. To close

A spirits flight to end the evening — small measures, long conversation.

Private group bookings

Take the head of the table.

Private nights run on the dates the season leaves open — the whole long table to yourselves indoors, or a farm dinner set between the rows. Tell us how many chairs to set and the evening gets built around that number.

A private table can be a dinner of your own, a chef collaboration night with a kitchen you choose, or a farm dinner for your group.

Inquire about a private table

  1. Choose a night

Pick a date from the season calendar, or ask about the nights running between the ticketed dinners.

  2. Tell us the table

How many chairs to set, and whether you want the long table indoors or the farm table outdoors.

  3. We set the menu

Courses, pairings and the pace of the evening, agreed before you arrive — so nobody has to make a decision at the table.

Reserve

Request your seats.

The season sells by the chair, not by the table. Send your details and we'll come back to you by email to confirm your place, your pairing and the date — then all you have to do is arrive hungry and take the seat with your name on it.

Seats are set to the length of the table.
