Method · The oven
Three movements, repeated all day. The dough is made first and left to rest, the wood goes in next, and the pie is boxed the moment it leaves the floor of the oven.
Flour, water, salt and yeast, mixed and set aside to rest until it stretches without tearing. It is divided, rounded and waited on — nothing here is rushed.
Split wood, lit early so the oven floor glows before the first pie. The heat is read by eye, then the pie goes in on the peel and turns until the edge blisters.
Out of the fire, cut, boxed and set on the counter — or stacked for delivery across New Haven, still breathing steam when it reaches the door.
Also on the ledger
A pizza order is usually more than a pizza. Everything else on this page is made the same day and written into the same book.
Leaves kept cold and dressed sharp, so the bowl still has a bite to it when it reaches the table.
Knotted from the day’s dough and sent through the oven with the pies — garlic, parsley and a gloss of oil.
A short list of flavours at the end of the counter, scooped into a dish or packed into a tub for the walk home.
