Maple & Mortar Pantry · Burlington, Vermont
A specialty pantry on bread time. Local cheese cut to order at the counter, sourdough workshops at the back table, and the staples that keep a kitchen running.
Workshops
Workshops run in the small room behind the cheese case, where the oven lives. Small groups, aprons on, flour everywhere.
Start to finish: mix, fold, shape, bake. You leave with a jar of starter and a loaf to take home.
Reserve a seat →Bring your sluggish jar. We will feed it, smell it, and work out what it needs.
Reserve a seat →For people who have baked before. We shape, score and load the shop oven together.
Reserve a seat →Flour on your sleeves, a jar of starter, and something warm in your hands.
The cheese case
Local cheese, cut to order at the counter. If you are not sure what you want, say so — that is how most of it gets sold.
Tell us how much. We cut it, wrap it in paper, and write the name on the tape so you remember what you liked.
There is always something open behind the counter. Ask what is good this week and we will hand you a piece.
Packing
The pantry shelves, the cheese case and the bread table, boxed up and carried out the door.
Flour, oats, beans, tinned fish, olive oil — the shelf we cook from. Pick your own, or let us choose.
Shop the shelf →Built around cheese, bread and something sweet. Tell us who it is for and we will pack it.
Build a basket →A box on a schedule, packed from whatever is best that week. Pause whenever you like.
Start a box →Visit
Book a seat at the back table, start a box, or come in and point at the cheese you want.
