One night, start to finish

The night,
batch by batch

Every bag we sell starts after dark. Here's how the hours run, from the green beans coming through the door to the bags on the shelf.

  1. 23:00

    Green beans in

Sacks split, weights checked, the first charge dropped into a drum that's been running hot for an hour.

  2. 01:20

    First crack

The beans tell you when they're ready. We listen, watch the color, and pull the batch at the profile we logged last time.

  3. 02:45

    Off the drum

Straight into the cooling tray. Hot, fast and loud — then quiet, and the whole room smells like the finished cup.

  4. 04:30

    Cupping table

Every roast gets tasted before it goes anywhere near a bag. If it doesn't hold up, it doesn't ship.

  5. 06:00

    Bags sealed

Weighed, sealed and dated. On the shelf before the door opens in the morning.

What we roast

What comes off
the drum

Whole bean and espresso blends by the bag, cold brew concentrate by the bottle, and the gear to brew it all with.

Small batch · whole bean

Single-origin whole bean

One farm, one lot, one roast profile. We roast these in small batches through the night and log the profile on every one, so the coffee in your cup tastes like the coffee we cupped.

  • Rotating lots, whole bean
  • Roast profile logged per batch
  • Tasted before it's bagged

Whole bean · by the bag

For the bar

Espresso blends

Built for milk and for straight shots. The same recipe and the same profile every time, so your bar pulls the same shot on a Saturday as it does on a Tuesday.

Espresso · by the bag or the case

On tap

Cold brew concentrate

Steeped long and slow, then cut so it pours straight over ice or straight into the tap line.

Concentrate · by the bottle

On the bench

Brew gear

Grinders, drippers, scales and filters — the same tools we keep in the roastery. Add them to any order and they ride along with your beans.
