The shave
Shaved, not crushed.
A shaved ice is not a crushed ice. The blade takes a block down to something closer to powder — light, dry and cold, with a texture that gives under a spoon.
That fineness is the whole point. It holds a pour of syrup instead of drowning in it, so the color settles in layers and the last bite tastes like the first.
